However, we are very much not those people, for some of us breakfast is non-negotiable. However, we don’t always have a ton of time to spend cooking in the morning. In the same vein there are quite a number of healthy and timesaving breakfast food.
Best of all, many of these breakfasts take 20 minutes or less to pull together.

Plantain Frittata is a delicious breakfast of baked plantain and eggs. It’s so easy to make yet so tasty twist to traditional fried plantain and eggs. This is one of our favorite lazy weekday breakfasts and also perfect for a nice Sunday morning. Get it into the oven or stove while to prepare for work.
It takes a 25 mins to cook plantain frittata in the oven and up to 30 mins on the stovetop.
Frittata is an egg based Italian dish similar to an omelet or crustless quiche which is usually enriched with additional ingredients like meats and vegetables.
Borrowed from the Italian dish described, Plantain Frittata is a Plantain and egg dish which is made by cooking fried plantains, eggs, veggies and meats together in a baking dish as a casserole in the oven or cooked slowly on the stove top.
If you’re looking for a great way to step up your breakfast game making plantain and eggs this way is a game changer.

MAIN INGREDIENTS

  •  Ripe plantains
  • Eggs
  • Onions
  • Salt
  • oil
  • Seasoning cubes
  • Bell peppers
  • Tomatoes
  • Pepper flakes

Other ingredients of your choosing can also be added such as meat, fish, sausages, spices and many more.

HOW TO MAKE PLANTAIN FRITTATA
OVEN METHOD

First wash and peel the plantains: here’s how to peel plantains. Cut off the tips of the plantains and make a skin-deep slit in the middle from one tip to the other. Pull the skin back to reveal the plantain.
Cut plantain into slices fry in oil till golden brown and set aside. Sauté onions, veggies (sausages, meat, fish) set aside to cool. Then preheat the oven to 350°F / 180°C
Lightly grease the oven pan beat eggs, mix in the cooled sautéed veggies and sausages. Pour egg mix into the cast iron, top with fried Plantains. Bake in the preheated oven for 25 mins or until center is set.

STOVETOP METHOD

  • Lightly grease frying pan (preferably nonstick)
  • Pour Mix into the frying pan
  • Cover frying pan, cook on medium low heat for 30 mins or until the center firms up.

You can serve with juices or hot chocolate, and boom you’re ready to start a healthy day.
